Kaiapoi Distillery has been producing premium New Zealand whisky, port and fine spirits since 1981. From our distillery in Kaiapoi, Canterbury, we continue to produce spirits using traditional methods, carefully selected oak casks and pure water sourced from the Southern Alps. Founded in 1981, Kaiapoi Distillery is an independent, third-generation family company and remains one of New Zealand’s longest-standing distilleries, known for its commitment to quality and exceptional New Zealand whisky.

The Copper Pot Still

At Kaiapoi Distillery, our traditional hand-beaten copper pot still, crafted by the renowned John Dore still makers of London, remains central to our distilling process.

This copper pot still plays a central role in refining the spirit and helping shape the smooth, balanced character found in our Kaiapoi Single Malt whiskies and other premium spirits.

Guided by traditional methods and decades of experience, our distillation process is marked by precision and consistency. It is this dedication to craft that has helped define Kaiapoi Distillery since 1981.

Pure Water, Exceptional Spirits

Water is fundamental to the quality of our spirits. In Kaiapoi, we are fortunate to draw on exceptionally pure water that originates in the Southern Alps and is naturally filtered through deep Canterbury gravels.

This purity supports the balance and character found across our premium whisky, port and other spirits, and reflects the standard we have maintained since 1981.
